Instructions for Using Red Yeast RV002
Red Yeast RV002 serves as a nutritional aid for fermentation. It is carefully selected from high-quality, natural yeast strains to ensure quick, stable, and efficient fermentation. It is compatible with tannins and pigments (found in grape skins) during fermentation, producing an abundance of polysaccharides (starch), contributing to a good structure and enhancing the distinctive flavors of red wine.
Suitable for a variety of fruits such as grapes, apples, and more, RV002 also boosts the aroma of wine. It leaves minimal sediment after fermentation, stabilizes pigments and amino acids, and preserves the essential properties of lactic acid during malolactic fermentation (MLF).
APPLICATION:
Activating the Yeast: Prepare Red Yeast RV002 with sugar and water in a ratio of 1:2:10. Dissolve the sugar in warm water, adjust the water temperature to 32-37°C, add the yeast, gently shake, and let it sit for 15 minutes. Then, add the yeast mixture to the fruit juice, mix well, and seal the container for fermentation. Allow 15-30 days for fermentation.
