ECO Active Dry Yeast is a natural yeast strain, specially selected for industrial alcohol fermentation from starchy materials such as rice, sticky rice, etc. High yeast density, pure, used in combination with liquefaction and saccharification enzymes on an industrial scale.
Ingredients: Saccharomyces cerevisiae wine yeast (99.5%), emulsifier. Short fermentation time, high and stable efficiency.
Specifications:
Yeast density: ≥ 2 x 10¹⁰ CFU/g.
Fermentation temperature: 28-36°C (optimal at 32°C).
Fermentation time: 72 hours
Dosage: 2g/1kg of rice.
Application: Fermentation of rice-based materials: 1kg rice + 1.4L water.
Before fermentation:
Liquefy with Amylase enzyme ECO AML-100T: 100,000u/ml (0.6g/kg rice) + 1.4L water (at 85-90°C for 45 minutes).
Saccharify with Amylase enzyme ECO AML-260: 260,000u/g (1.2g/kg rice at 45-60°C for 1-2 hours).
Cool down to 35°C, add 2g of yeast into the fermentation tank, seal and ferment for 72 hours before distillation.
Packaging:
500g/bag (20 bags/carton).

Shelf life and storage:
Store in a cool, dry place, away from direct sunlight.
Opened packages should be kept refrigerated.
Shelf life: 24 months from the date of manufacture.
